Torino · Founded 2026 · Italian innovative startup

Origine is a promise.
We build the proof.

NextFluent Italia is a Turin research venture engineering sovereign AI, computer vision and IoT sensing for the two countries whose reputations rest on origin: Italy and France. Our purpose is to turn DOP, IGP, AOP and AOC claims from paper into evidence. We are at day one, and we are looking for the consortia, cooperatives and researchers who want to shape what comes next with us.

“Italy and France together account for the majority of the world's protected-origin food. They also account for the majority of its counterfeits. For a century, the only defence has been a paper certificate. That is the gap we were built to close.”

01 · Platform

Four pillars.
One verifiable promise.

Each pillar carries its current maturity, so you know what you would be piloting today versus co-designing with us tomorrow.

01
In research

Proprietary AI

Domain-specific models trained on protected-origin supply chains: cheese, olive oil, wine, cured meats, produce.

02
In prototype

Certified hardware

Computer vision and IoT sensing devices designed for cellars, dairies, mills and packing lines.

03
In research

Federated by design

Learn across producers without ever pooling raw data. Sovereign, EU-hosted, privacy-preserving.

04
In design

Evidence, not opinions

Every verdict becomes a structured provenance dossier: images, sensor logs, model version, timestamps and operator identity, digitally signed so it is tamper-evident. Consortia can attach it to certification-body audit files or submit it to a court-appointed expert. It does not replace a ruling, but it supplies reproducible technical evidence.

02 · The research thesis

See what the certificate can't.

Multimodal AI, fusing spectral imaging, IoT telemetry and supply-chain records, can fingerprint every batch and surface adulteration, substitution and mislabeling with evidence a regulator can audit. We are building that fingerprint for Italian and French protected-origin food, alongside the people it is meant to defend.

  • Computer vision on raw and packaged product (in prototype)
  • IoT sensing for temperature, humidity, chain-of-custody (in prototype)
  • Federated learning across consortia (in research)
  • Signed provenance dossiers for audit, certification and court-appointed expert review (in design)
03 · Roadmap

The first twelve months.

We publish what we're working on because a brand-new company is judged on the promises it keeps.

  1. Q1 → Q2

    Foundational R&D

Vision and sensing prototypes on a first protected-origin category, engineered with a founding Italian partner.

  2. Q2 → Q3

    Pilot cohort 01

Field trials with two to three consortia or cooperatives across Italy and France. Models trained on their reality, evidence owned by them.

  3. Q3 → Q4

    Federated backbone

First cross-border federated learning experiments between Italian and French producers, sovereign and privacy-preserving by construction.

  4. Q4 →

    Evidence API

API for signed provenance dossiers usable in audit, certification and court-appointed expert review.

04 · Who this is for

For the consortia, cooperatives and authorities on both sides of the Alps.

Cohort 01 is a small, deliberately mixed group of protected-designation consortia, producer cooperatives, certification bodies and public authorities from Italy and France. If the promise of origin sits at the centre of what you protect, we want to build the verification layer with you.
